Our take on a variety originally grown in Northern Italy and known as Soave.
Aromatic with flavours of citrus, blossom, pear and melon. A saline minerality on the finish.
We followed a different path and found our place. Under the silent watch of three extinct volcanoes, high above the plains, we farm in cool air and shifting winds, powered by the sun. We work by hand and with care for the land, building balance through regenerative practices. The wines carry that same intent, bright, layered and full of life.

I got wind of Welshman’s Reef wines (est 1984) only recently (a year or two ago), and the wines impressed me, and the adjacent but co-op project is this, Circle of Hills, a singular site, isolated somewhere 30-or-so kilometres outside of Ballarat in a pocket between three extinct volcanos. A younger gen influence seems to be making waves in all this.
Garganega via the words ‘salty, textural white wine’. Yes thanks. It’s lemon verbena, honey-ginger tea, green pineapple, sea spray and aniseed all happening here. Crisp texture around a somewhat juicy core. Very aromatic. Very refreshing. Seaside white wine of highest order. A delight.
